I made these delicious #RedWhiteAndBlue whoopie pies for Memorial Day weekend. They came out so good! These would make a great dessert all year round. You can switch up the food coloring for any occasion.

Whoopie Pie Cookies
1 box of french vanilla cake mix
1 stick of butter, melted
2 eggs
1 teaspoon vanilla extract
Red and Blue food coloring
Whoopie Pie Filling
3 1/4 cup powdered sugar
1/3 cup butter softened
2 teaspoons vanilla extract
2-3 tablespoons milk or almond milk
Directions
Preheat your oven to 375 degrees and line a cookie sheet with parchment paper.
Melt the butter and in a large bowl, combine with the extract, cake mix and eggs.
When you have your ingredients combined, split the batter into two separate bowls.
Add in several drops of red food coloring into one bowl and the blue into the other. Mix in food coloring. You need one bowl of red and one bowl of blue.
Put a spoonful of the batter into your hand after spraying your hands with non-stick cooking spray.
Roll it into a ball and set on your cookie sheet.
Cook cookies for 9 minutes.
Remove them from the oven. Let cool completely.
In a large bowl combine powdered sugar, vanilla extract, butter and milk and beat until light and fluffy.
Spread the frosting onto the back of one cookie and then top it off back to back with a cookie of the opposite color, making a sandwich.
